Broccoli
in oyster sauce

Ingredients
- 3 med Broccoli stalks, fresh
- 3 tbsp Peanut oil
- 1/2 tsp salt
- 6 tbsp Oyster sauce
- 1 tsp Sugar
- 1 tsp Tapioca starch
- 1/4 cup water
- Sesame seed oil (drops)
- 1 tsp Soy sauce, light
Method
Wash broccoli and drain in a sieve. Cut the tops into flowerets.
Make stalks into match sticks about 3 inches in length. In
a heated wok, add peanut oil until smoke starts to rice, put
in broccoli, salt. Stir and mix well
Put in 2 tablespoons of water, cover with a lid.
Cook on high heat for 3-4 minutes until steam escapes from
the edge of lid. Remove and drain with a sieve before putting
on plate. Use a saucepan to boil up solution of oyster sauce,
tapiocas starch, water, sesame seed oil and light soy sauce.
When done, apply over broccoli. Serve hot.

Manis (Fruit in soy sauce)

Ingredients
- 1/4 cup Ketjap manis
- 1/2 ea Thai chile
- Ginger
- 1 tbsp Lime juice
- 3 cups Assorted fresh fruit
Method
Cut up fruit into bite-sized chunks. Grind ginger and pepper.
Add ketjap manis, thai chile and lemon juice. Pour over the
fruit and mix gently. Let stand an hour or more before serving.
